Caribbean Black Bean and Rice Salad

  1. 2 cup cooked rice, cooled
  2. 1 can (15 1/2 oz) black beans, rinsed and drained
  3. 1 cup chopped red bell pepper
  4. 1/2 cup halved and thinly sliced radishes
  5. 1/2 cup matchstick carrots
  6. 1/2 cup lime juice
  7. 1/4 cup extra-virgin olive oil
  8. 1/4 cup chopped cilantro
  9. 1 clove garlic, minced
  10. 1 tsp. grated lime peel
  11. 1 tsp. salt
  12. 1/4 tsp. black pepper
  13. 1/8 tsp. red pepper flakes

Combine all ingredients in a medium bowl and toss gently to mix well. Serve immediately.
