Mexican Corn Off The Cob

  1. 4 cups torn spinach leaves
  2. 2 cups fresh corn kernels
  3. –about 4 ears
  4. 1 cup diced red bell pepper
  5. 1 cupdiced peeled jicama
  6. 1/2 cup diced red onion
  7. 2 tablespoons minced fresh parsley
  8. 2 tablespoons fresh lemon juice
  9. 2 teaspoons vegetable oil
  10. 1/4 teaspoon salt
  11. 1/4 teaspoon ground red pepper
  12. 4 tablespoons crumbled goat cheese

Combine first 6 ingredients in a medium bowl. Combine lemon juice, oil, salt, and pepper in a small bowl; stir well with a whisk. Pour over salad, tossing gently to coat. Sprinkle with goat cheese.

Yield: 5 servings (serving size: 1 cup salad and 1 tablespoon cheese).
