Potato Scones
- 3/4 cup flour
- 1/2 tsp. baking soda
- 1 tsp. baking powder
- Pinch of cream of tartar
- 2 1/2 Tbsp. bacon fat or butter
- 1/2 cup cooled mashed potatoes
- 1/2 tsp. salt
- 2 to 3 Tbsp. milk
Sift together the first 4 ingredients. Rub the fat or butter into the flour. Add mashed potatoes and salt. Mix and add enough of the milk to make a soft dough. Pat the dough about 1/2 inch thick on a floured board. Cut into rounds about 3 inches across. Bake in a preheated 425 degree oven for about 30 minutes or until golden. Split and serve hot with butter. Makes 4 scones.
