Salmon Plaki

Basic:

  1. Salmon fillet
  2. Can of chopped tomatoes
  3. 6 tablespoons of olive oil plus more to grease the dish
  4. 2 or more teaspoons of chopped garlic
  5. Salt to taste
  6. Pepper
  1. Optional ingredients:
  2. Chopped Kalamata olives or other black Greek olives
  3. Finely chopped parsley
  4. Capers

Preheat oven to 375 Grease a glass rectangular baking dish with olive oil Place salmon in the dish Mix all other ingredients, pour over salmon Bake 30-45 minutes

Might experiment with rubbing a little salt on the surface of the salmon
