Salmon Plaki
Basic:
- Salmon fillet
- Can of chopped tomatoes
- 6 tablespoons of olive oil plus more to grease the dish
- 2 or more teaspoons of chopped garlic
- Salt to taste
- Pepper
- Optional ingredients:
- Chopped Kalamata olives or other black Greek olives
- Finely chopped parsley
- Capers
Preheat oven to 375 Grease a glass rectangular baking dish with olive oil Place salmon in the dish Mix all other ingredients, pour over salmon Bake 30-45 minutes
Might experiment with rubbing a little salt on the surface of the salmon
