Spring Onion Salad (Salade D'oignons De Mai)

  1. 2 pounds small spring onions
  2. pinch of salt
  3. Black pepper — to taste
  4. 1 tablespoons sugar — preferably super fine
  5. 1/4 cup olive oil
  6. 2 tablespoons white wine vinegar

Peel onions and chop finely. Place onions in sieve and pour boiling water over them, then run some cold water over onions and drain. Place in a bowl, sprinkle with salt, pepper and sugar. Add oil and vinegar and mix. Serve at room temperature. Makes 8 servings.
