Loaf pan Spinach Three Cheese Lasagna

Spinach Three Cheese Lasagna (4 servings)

  1. 4 sheets no-boil lasagne
  2. 1 (10 ounce) package frozen or 1 lb fresh spinach
  3. 1 small onion, minced
  4. 1 garlic clove, minced (1 teaspoon)
  5. 1 tablespoon oil
  6. 1 cup pasta sauce
  7. 1 cup Ricotta cheese
  8. 1/2 cup shredded Mozzarella
  9. 1/4 cup grated Parmesan cheese
  10. 1 egg
  11. 1 teaspoon sugar
  12. [dash cinnamon]
  13. 1/4 cup shredded mozzarella or 1-2 slices
  14. cooking spray

SPINACH FILLING: Saute onion & garlic in oil 1 minute. Add frozen drained spinach Saute until most of the moisture is absorbed, if using fresh, just saute until wilted.

CHEESE FILLING: Blend the egg with the Ricotta, Mozzarella & Parmesan and add cinnamon.

ASSEMBLY Spray the loaf pan with cooking spray Pour a few tablespoons of sauce on the bottom of the pan. Layer 1 piece of lasagne, a third spinach mixture, a third cheese mixture, another piece of lasagna then spinach & cheese, then repeat. Top with last slice of lasagna, pasta sauce and Mozzarella.

BAKING Bake covered with foil for 45 minutes. Remove cover last 5 minutes to brown. Let stand 8-9 minutes before serving. Great reheated!
